We are Isabelle e Sebastien, pastry chefs since 1995.

We have worked in prestigious pastry shops such as Besuchio and De Baere, Michelin-star restaurants like Aimo e Nadia, and 5-star luxury hotels such as Bulgari, Park Hyatt, Palazzo Parigi and Principe di Savoia.

Our careers and our lives intersected in 1999 in the pastry lab of Harrod’s in London— a city in which we spent some beautiful, educational years. After a short stint in Luxembourg, we moved to Milan. Then, in March 2019, we began a new chapter of our lives in Bossolasco, in Alta Langa.

Here, we created our first, very own pastry shop. We called it L’Albero delle Galline: a bizarre name that comes from a poetic, curious tale. We’d like to think it represents us very well.

Years of working our way up the ladder gave us some solid foundations, while the time we spent abroad gifted us with a wide, international view of patisserie. Finally, the years we’ve spent as partners in both business and life have increased our understanding of each other’s work.

This all contributed to us feeling ready and prepared to start this new path on our own, with humbleness and dedication, making sweets that are both respectful of the history of the place in which we are and, and the same time, the perfect expression of our values, style and personalities.

We seek continuity but also creative freedom.

We bring together tradition and novelty, precision and craftmanship. To us, great patisserie is a combination of quality ingredients, techniques, respect for times and temperatures, attention to detail, research, fine balances in flavours and textures, elegance and simplicity. The final result has to be impeccable, without revealing the effort and the work that’s behind it. Rigour and lightness.
